Evolution of Pizza: From Ancient Flatbreads to Modern Pizzerias

The story of pizza is quite fascinating as well. Let’s take a journey.

Imagine the perfect pizza: a crispy crust, ooey-gooey cheese, and a generous helping of savory toppings. The popularity of pizza is quite unparalleled. You want food for a party? Order some food. Movie night? Order some pizza. Family pizza night, getting food at the new pizza place, there’s very few food that glues people together in a wholesome manner. You overordered pizza? Store them to have them for breakfast. See? Versatile food, versatile toppings. Pizza. Is. Good.

Our journey begins in the Mediterranean and Middle East, where ancient civilizations enjoyed flatbreads with a variety of toppings. These early flatbreads were baked on hot stones or in mud ovens and topped with simple ingredients like herbs, oil, and cheese.

As time passed, flatbreads evolved and became more elaborate. In ancient Greece, for example, flatbreads were often topped with onions, garlic, and herbs. The Romans also enjoyed flatbreads, which they called "picea," and topped them with a variety of ingredients, including cheese, honey, and even seafood.

There’s even mention of pizza in Aeneid. Basically, people loved pizza seen before pizza became a thing.

Back to the story. In the 16th Century Naples, modern pizza as we know it today began to take shape. Neapolitan flatbreads were often topped with tomato sauce, which had only recently been introduced to Italy, and mozzarella cheese. The royal visit of French Queen Margherita in nales brought about the discovery of margherita pizza. Tired of the classic royal French food, the queen asked for something new. The Italian royal chef came up with 3 types with one being pizza made with tomato sauce, mozzarella and basil. Quen absolutely loved it and that’s hpw th classic came to be in 1889.

Pizza became a hit in Italy and eventually made its way across the Atlantic to the United States. In the early 1900s, Italian immigrants brought their pizza-making skills to the US and opened small, family-owned pizzerias in cities like New York and Chicago.

As pizza's popularity grew in the US, so did the demand for more variety. Soon, pizzerias began experimenting with different toppings and styles. Chicago-style deep dish pizza, for example, features a thick crust and a deep layer of toppings, while New York-style pizza is known for its thin, foldable slices.

Today, pizza is a global sensation, enjoyed by millions of people around the world. From classic Margherita to the most innovative toppings you can imagine, there's no limit to the possibilities when it comes to pizza. And while its evolution may have been a wild ride, one thing is for sure: pizza is here to stay, and we can't get enough of it.
