The word “salt” most often refers to sodium chloride, an everyday cooking staple and a mineral that helps maintain our physical health. Salt is mined and processed from oceans, lakes, and underground salt deposits. One of these compound types is "green salt", which can come from sea kelp or seaweed.

Green salt is a form of unrefined sea salt; meaning it has not been subjected to high temperatures in processing as with typical table salt. Production

Salicornia is a halophyte—a plant that can grow in salty conditions. It's also known by other names, such as pickleweed, glasswort, hamcho, samphire or sea beans. Salicornia has been grown and eaten for centuries in Europe and Asia, especially in Korea. Sometimes it's eaten fresh, cooked or pickled. It has a succulent texture and taste because of its high salt content. Green Salt is produced in Baja California, Mexico, by the Noriega family. They have been harvesting Salicornia for two decades now.

Taste

Green Salt tastes both salty and savoury. It has a rich, umami quality that some describe as seafood-y. The green colour comes from the presence of chlorophyll. Made by the same people as liquid chlorophyll, Green Salt can be used just like regular salt in both cooking and baking. It even has less sodium content than regular salt, but you may need to use more of it if you're aiming for the same level of salty flavour.

Healthy alternative

Green Salt can be used as a direct substitute for regular salt, but you should use it mostly as finishing salt because anything cooked with Green Salt will turn slightly green. Plus, depending on what kind of dish you're making, the salt may not dissolve completely. It's also delicious with seafood thanks to its umami quality. You might have heard a lot of bad things about table salt, and that's mostly because it often has a high sodium content and tastes very salty. Some people say they do notice a difference in flavour between table salt and green salt, but others say it tastes just the same. With up to 50% less sodium, Green Salt is the salt alternative for people with a low-sodium diet. It only contains 20% of the sodium that regular salt has. However, you should consult with your doctor before incorporating Green Salt into your diet if you are on any medications or have underlying health conditions.
