It has been a long day and yet you want your tummy to be treated with some comforting food and not some takeaway. Rice can never upset you especially when it is cooked at home, however all the way cooking dal, bhaji to accompany your rice can be tedious when you are hungry. There are a number of one pot vegetarian rice recipes, that is not khichdi that you can prepare in a jiffy. All you need is some basic ingredients, and some patience.

Tehri

Straight from the kitchens of the erstwhile Nawabs of Awadh,  a one-pot rice recipe that smacks of royalty and even has a health boost without being too heavy, is easy to make. The dish is still cooked with love in Uttar Pradesh  and does not need hours of toil in kitchen. You can also call it veg pulao or biryani. The dish uses  some whole spices like cinnamon, cardamom, peppercorns and all the masala of a curry. Toss it with the veggies of your choice and pressure cook with rice.

Curd rice

Nothing is more comforting then a bowl of curd rice on a hot sweltering day. It is great for the gut and gives you a cooling effect. Although its prepared in different ways. No one can make it better than the South Indian states. Just cook some rice and let it cool, or use leftover rice. Mix it with some curd and milk in a mixing bowl, until it is creamy. Now add tadka made of ghee, curry leaves, mustard seeds and peanuts. You can spice it up with some red chilli flakes, chopped green chilli or the podi powder. Garnish with some chopped coriander and pomegranate pearls.

Vaangi Bhath

Vaangi Bath originated in Karnataka, but there is a Maharashtrian version to it as well. Vangi mean brinjal and bhath means cooking together. It is a famous breakfast dish and is accompanied with Raita. It is a great way to use brinjal in your diet if you otherwise don’t like it. A special masala is prepared consisting of red chilis, coriander sees, poppy seeds, black gram dal, grated dry coconut, sesame seeds, cinnamon sticks, chana dal and asafoetida. You can prepare the masala and store it in a container for months to use.

Sambar, rice and thoran is a lip-smacking combination anyone can resist. But you can also madea one pot sambar rice without the fuss of making two separately. Sambar rice recipe which tastes like Bisibele Bath is lighter and simpler that has intense flavors of freshly ground masala paste.
